Title: Hawaiian Pineapple Chicken

3tbVegetable oil
2cCooked, boned chicken cut into small chunks
1/2cCelery, diced
1/2cScallions, finely sliced
2tbSoy sauce
1/2cMacadamia nuts, chopped
1/2tsSugar
1/2cChicken stock
1cFresh pineapple, cut in chunks

Heat oil in wok, or skillet, and saute chicken, scallions and celery for 3 minutes. Stir in soy sauce, nuts and chicken stock. Cover and simmer for 5 minutes. Add pineapple and simmer another 3 minutes. **If macadamia nuts are not available, use brazil nuts.
